Đu đủ xanh đem gọt vỏ rồi bổ đôi, cắt bỏ phần ruột đu đủ sau đó đem thái sợi to, thả đu đủ vào chậu nước rửa lại cho hết nhựa. Vớt đu đủ cho vào âu cùng với 1 muỗng cà phê muối, bóp khoảng vài phút cho đu đủ hơi mềm rồi rửa lại cho sạch.
Ngâm khoảng 4 tiếng sau đó đổ nước vôi trong đi, rửa lại vài lần cho sạch. Đổ nước vào nồi và bật bếp nấu cho nước sôi. Cho 1 cục nhỏ phèn chua vào cùng rồi đổ đu đủ vào luộc sơ qua 1-2 phút thì vớt ra, thả đu đủ vào chậu nước lạnh vài phút thì vớt ra để cho ráo nước.
Cho đu đủ vào âu, thêm 600g đường, trộn đều và ướp đu đủ khoảng 6 tiếng cho đường tan hết. Trong thời gian ướp đường, thỉnh thoảng nên đảo đều để đu đủ ngấm đều đường. Đu đủ sau khi đã ướp xong thì đổ hết vào chảo, bật bếp nấu cho sôi và sên cho tới khi nước đường rút cạn bớt, trong khi sên thi thoảng đảo đều là được.
