Mề gà mua về làm thật sạch, rửa nhiều lần với nước muối và giấm để giảm bớt mùi tanh. Sau đó, dùng dao khía hình hoa lên mề gà. Cho mề gà vào tô ướp với muối, 2 muỗng rượu nấu ăn, gừng thái sợi khoảng 15 phút cho thấm gia vị.
Ngò rí nhặt bỏ lá úa, cắt bỏ gốc, rửa sạch và để ráo nước. Ớt cắt lát mỏng. Tỏi xắt lát. Nấu nồi nước sôi, cho mề gà vào chần sơ đến khi chín tái thì vớt cho mề ráo bớt nước.
Đun nóng chảo với dầu ăn, thả tỏi vào phi thơm rồi đổ mề gà vào xào. Cho tiếp ớt, ngò, nước tương vào chảo và đảo đều để mề thấm gia vị. Nêm lại gia vị cho vừa ăn, mề chín vừa không bị dai là có thể tắt bếp rồi đó. Trút mề gà xào ra dĩa và ăn cùng với cơm nóng.
