Gọt vỏ khoai lang, đem rửa sạch rồi cắt khoai lang thành từng miếng nhỏ vừa ăn. Sau đó nấu sôi nồi nước, cho khoai lang đã cắt nhỏ vào hấp chín mềm. Tiếp theo dùng muỗng hoặc nĩa dằm cho khoai lang mịn nhuyễn.
Sau khi nghiền nhuyễn khoai lang, cho tiếp vào 30gr đường trắng, 30gr bột năng và 30ml nước cốt dừa. Tiếp tục dùng nĩa trộn đều các nguyên liệu đến khi hỗn hợp khoai lang mịn, không dính tay. Dùng 2 bàn tay se từng viên khoai lang thành hình tròn dài như cái kén.
Pha hỗn hợp bột ướt gồm 200gr bột chiên giòn, 120ml nước và 50ml nước cốt dừa. Dùng muỗng trộn đều đến khi bột hơi sánh đặc và để bột ướt nghỉ 15 phút. Cho từng viên khoai lang kén lăn qua bột năng một lớp áo mỏng, sau đó lăn qua hỗn hợp bột ướt.
Đun nóng 300ml dầu ăn, cho từng viên khoai lang kén đã lăn bột vào chiên vàng đều các mặt. Sau đó vớt ra để ráo dầu. Khi chiên nên thường xuyên đảo đều để khoai lang kén không bị cháy.
