Hành lá rửa sạch thái khúc, gừng gọt vỏ thái sợi, sả thái lát mỏng, tỏi băm nhỏ, ớt thái lát mỏng. Cá chim làm sạch rồi thấm khô nước, đun nóng 2 muỗng canh dầu ăn trong chảo, cho cá chim vào chiên chín vàng 2 mặt thì vớt cá ra đĩa.
Vẫn cái chảo ấy, cho thêm 1 muỗng canh dầu ăn, cho tỏi, sả, gừng vào phi thơm sau đó cho ớt và 1/2 chén nước vào đun sôi làm nước sốt. Nêm 2 muỗng canh nước tương, 1 muỗng canh nước tương đậm đặc, 1 muỗng canh đường, 1/4 muỗng cà phê muối, 1 muỗng cà phê nêm. Sau đó cho cá chim đã chiên vàng vào, rưới đều nước sốt lên cá cho thấm đều gia vị. Cho hành lá, tiêu, rim thêm 1-2 phút là tắt bếp.
